Spinach, Apple and Walnut Salad...


Now that it is spring, I am looking forward to making some fresh salads. Here is one of my husbands favorites. I know the ingrediants seem a little odd, but this makes a light, slightly sweet, crispy salad that is great alone, or as a side.



¼ cup buttermilk
2 tbsp sour cream
1 tbsp honey
1 tbsp apple cider vinegar

8 oz baby spinach
Red apples, thinly sliced
1 cup red grapes cut in ½
hand full of candied walnuts

Mix together buttermilk, sour cream, honey, and apple cider vinegar. Set aside. Toss together spinach, apples, grapes and walnuts. Gently drizzle in dressing mixture and toss.
