Pulled Pork Sandwiches

So feeding a family of four, (four and a half if you count the baby I'm gestating at the moment) can be quite a feat to do. Whether your a working mom or stay at home mom like me, our days are so busy, it's hard to find time to cook a healthy, satisfying, and relatively inexpensive meal. I thought it would be nice to pass along some easy, cheap and most importantly yummy meals that I make for my family. Tonight I am making pulled pork sandwiches. The nice thing about this recipe is almost all the ingredients that it calls for you will already find in your pantry and fridge. What makes this meal cheap is the meat you use is pork butt shoulder roast, which is quite affordable anytime, but if you were me today, I scored it at my local grocer for $1 a pound! Finally what makes this recipe easy is you make it in the crock pot. The recipe is for a 2 pound roast, but if you are making a larger one like I am, just double the recipe.

Ingredients

  • 2 1/2 pounds pork shoulder
  • 1/2 cup chopped onion
  • 1 clove garlic, minced
  • 1/4 cup brown sugar
  • 1 teaspoon dry mustard
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 2 cups ketchup
  • 1/4 cup Worcestershire sauce
  • Hoagie rolls or buns

Directions

  1. Cut boneless pork shoulder crosswise into 1/4 inch slices. Partially freezing it will make slicing easier.
  2. In the slow cooker, combine sliced pork, onion, garlic, brown sugar, dry mustard, salt, pepper, ketchup, and Worcestershire sauce; mix well, and cover. Cook on Low, stirring occasionally, for 6 to 8 hours or until the meat is tender.
  3. OR : In a Dutch oven or large saucepan, combine pork, onion, garlic, brown sugar, dry mustard, salt, pepper, ketchup, and Worcestershire sauce; mix well. Bring to a boil, reduce heat, and cover. Simmer, stirring occasionally, for 2 1/2 to 3 hours or until pork is tender.
  4. Pull pork apart with ford. Serve warm on rolls.
